Gorgeous Ingredients Sliced and Diced with Careful Precision

Between the culinary talents of Hatsune’s owner Alan Wong and his brilliant Executive Chef Bruce Yan, together they wanted to create a dish with natural beauty, health and vitality in mind. After a 2 week trip in Japan earlier this September, Alan came back to Beijing bursting with new dish ideas and having recently been introduced to my favorite food show on Netflix called Chef’s Table, he couldn’t wait to get back into the kitchen, inspired to make something very different from anything you can find on the regular Hatsune menu.

While the colorful choice of premium sushi ingredients tantalize your senses, owner Alan Wong says the secret behind this dish lies beneath what the eye can see (hint: there’s a crunch!).

And just in case you’re wondering whether there is a strategy to best devour this dish, you bet there is. This gorgeous dish of plated sushi is intended to be consumed with a wooden spoon in hand (don’t be shy to dig deep) and a light dabble of your personal soy sauce and wasabi mix.
